Do you have a favorite soup recipe?
Vegetarian Taco Soup
Ingredients:
- Cooking oil (1 teaspoon)
- Onion (1, diced)
- Water (1.5 cups)
- Diced tomatoes (1 can)
- Tomato sauce (1 can)
- Black beans (1 can)
- Mexican-style chili beans (1 can)
- Corn (2/3 cup)
- Taco seasoning (1 Tbsp)
- Shredded Cheddar cheese
- Sour cream
- Cook onion in oil in your soup pot until tender.
- Mix in all other ingredients; bring to a boil.
- Cover, reduce heat, and simmer for 30 minutes.
- Top with cheese and sour cream (optional, but why wouldn't you?) : )

I'll have to try this one.. We love taco soup, and we don't eat meat on Friday's, so we are always looking for new meatless meal ideas.. I know what we are having this week! :)
